OT- Simple Appetizer
Wash and remove the stems from baby Bella’s (or your favorite mushroom cap), stuff with jalapeño pimento cheese (I typically use the Palmetto Cheese brand), top with bacon pieces and some of your favorite spicy rub (used DP swamp venom). Bake in the egg or the oven at 350-375 degrees for around 10-15 minutes.
Forgot to take a pic until we were down to the last one- give them a try and hope you like them.

Yes, we do buy ours at Costco but wasn’t sure if it was a regional thing. The Costco version is 2x the size for the price of the smaller one at Harris Teeter.NorthPilot06 said:@Wolfpack looks great. When I was a kid, we moved around a bit and never lived where pimento cheese was a thing. Eventually wound up in NC, but I didn't care for the stuff. Married someone who loved it, but then we moved to the frozen north where it was impossible to find. Bottom line, I haven't tasted the stuff in nearly 50 years! I've been fine with that.

Read this stuffed mushroom thread and it looked so good, I started poking around for pimento cheese ideas. Tastes change y'know. I came across this 2015 post by @shucker...

Maybe I can buy pimento cheese here now, maybe not, but I found a couple of good looking recipes which are most likely better anyway. So either way, I'm good.

People who have any idea what a palmetto IS are harder to find up here!
