First overnight cook

As the title indicates, my first time doing a cook overnight. Lit the egg around 10:30 last night with some rockwood lump and a mix of post oak and pecan wood. Stabilized and running at 250 I tossed the brisket on at midnight.




Woke up this morning at 6:30 to it nailing that 250 temp. Brisket is coming along nicely!

Looking great right there. Gonna be a true banquet.An observation- I always rotate the dome thermo (taking care to ensure I don't impact the calibration nut) so my target temp is at 12 o'clock. That way a casual look lets me know how the cook is trending. FWIW-Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

That looks killer. What do you do that you can smoke a brisket overnight Monday and eat it for lunch on Thursday? Work from home? Retired? Vacation?And who's around to help you eat that hunk o'cow?
