go do something you normally wouldn't do with the family. I would say most people in the egg community buys a lot of stuff when they want it. last year we took the kids to the zoo for my wifes birthday instead of stuff and did the behind the scenes tours we normally wouldn't it was a blast.

Beautiful Japanese steel - you will never begrudge another slicing or chopping job; you will instead look forward to them.
A very high high end bottle of scotch (assuming you drink).
Vitamix or Blendtech.
A fun activity/outing/gift for you and your significant other. Options could include a lavish dinner, hotel room, lingerie, etc.
Kitchen-Aid mixer.
Anova sous vide cooker.
