@stlcharcoal do you know if the Shun premier boning knife can be sharpened by them? The blade has a beautiful design on it and I'm worried if I send it in that hammered look will go away.

Yes, all have a lifetime warranty and free sharpening by shun.  You would have to sharpen it hundreds if not thousands of times to get near that hammered area.  I've had my shuns for a year now, and they're still just as sharp as new.

Getting ready to trim my first 10#  SRF brisket and I’m headed to get a knife. I’m already in almost $200 for the brisket so don’t want to screw this up! Suggestions for favorite knives to trim fat etc? Our local store carries Wusthof,Victorinox, Shun for the most part.
Tony (Faraday’s) carries that shun boning knife that stlschsrcoal is talking about. It’s really nice.

centex: Faradays is our go to and I stopped by today. Ended up getting the Wusthof as it was on sale and I liked the way it felt in my hand. And then we bought a whole bunch of other stuff which is why his store always get me in trouble 😏 Super excited to get to trimming! Thanks for all the feedback.
Ha ha. I know the feeling. We teach bbq classes there so we are in there all the time. We should get together sometime and swap notes (we live in Lakeway)
No way! Small world. When do you teach? My hubby is the introvert, but I’m totally there for the next class.
We are doing a ribs class on the 20th of this month and we are doing the brisket class 8-17. Introverts welcome :)
