Pork belly burnt ends
I had no idea what I was doing here. Bought 4 large slabs of pork belly from Costco, to make bacon. While I was getting ready to put them into the cure, I couldn't resist and I cut off a piece of one belly to cook immediately. Here's the stack of bellies for the bacon:


These will get smoked on my egg in about 1.5 weeks. I rubbed the little slab with sugar, salt, and black pepper. Into the pellet pooper it went...

Got the internal temp up to about 180. Took it off and cubed it up. I really need to buy some heat resistant gloves to do this in the future...


Put them into a pan and dumped a bottle of bbq sauce in there. Covered with foil. Back into the pellet pooper at 300 for an hour or so...


They were delicious. I will do this again.

Insane is a great description. The first time I followed Malcom's recipe the result was so fantastic that Boss Lady told me to never try any other method.
