Wagyu Brisket

Smoked a Wagyu brisket overnight for my daughter’s 1st B-day on the 4th of July. It’s going to be hard to refrain from slicing and eating. Look at that bark! It cooked evenly and felt great. All 3 of my thermometers were at the same temp at the end (203 degrees). 2 probes in the flat and 1 in the point. I think this may be my best one yet!
