Grass fed skirt with chimichurri and oven roasted fingerling potatoes

so simple and so good.
potatoes:
Small fingerlings cut in halves
toss in EVOO, S&P
place cut side down on foil lined pan
tent in foil and cook at 450 for 20 min
remove foil after 20 min and cook 10-15 min uncovered to crisp up
Skirt: (or as APL likes to call flank)
salt and pepper
super hot sear (I don’t close the lid for thin steaks like skirt)
pour chimi on cutting board and put hot steaks on top of chimi to rest
spoon a bit more chimi over the top
Lay potatoes first and drizzle with a little chimi. Top with thin sliced steak and top with a little more chimi.

You cooked some of my all time favorites. Chimichurri is fresh and tangy; perfect for the heavy fat in any steak. And oven roasted potatoes done well are something I can eat any time. That meal was delicious I’m sure.Coleman, Texas
