Italian Beef and Onion Rings

Rubbed a chuck roast heavily with salt and Italian seasoning. On the egg @ 250 with Oak for smoke until it hit 160ish. Forgot the pick until it was tubbin time. In the pan I put beef stock, Worcestershire, pepperoncinis and their juice plus a few onions

Covered it with HDAF and let it go till the meat hit 216 and was probing tender. Then I pulled and let it soak up the awesome juices

Toasted the buns

Built the sandwich with provolone top and bottom

And plated with baked onion rings

You are definitely on quite an impressive run. Great cook. Pulled beef, regardless of country makes quite a meal. Nailed it again. Congrats.
Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint. -
Did some pulled beef on Friday, hard to beat but now I need to try with your pepperoncini. O Rings look great as well!
