    Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...

    Baked at 500 high in the dome



    I tried these on the egg but couldn’t get enough top heat. Ended up doing these inside.


    And i I didn’t get a picture of the gumbo! Not really sure how I screwed that up....

    And for desert.... we made an amazing blueberry cobbler that I was too drunk to remember to photograph (quite like the gumbo)
