Coconut Lime Shrimp

Still needing a little break from all the red meat consumption, I ventured into seafood fixings for this late weeknight meal.  Inspiration was derived from @Mattman3969's post.

The shrimp were marinated in coconut milk seasoned with Dizzy Pig’s Pineapple Head and
a touch of Zatarain’s.

 



 

As there was no acidic ingredient in the marinade, I allowed them to hang out in the fridge
overnight.  Right before the shrimp were put on the grill, jasmine rice was cooked with coconut, pineapple and lime juices.

 



 

Pineapple slices and a lime were quickly grilled before cooking the shrimp.

 


 

The shrimp were coated with Pineapple Head prior to being placed on the grill and given
another coating before being flipped.

 





 

Time to dig in.

 




 

The coconut milk melded with the sugar in the Pineapple Head seasoning to make this heavenly glaze, which was supplemented with a kick of heat from the Zatarain’s and the chilies in the seasoning.  The rice was a unique blend of sweet and sour and complimented the shrimp quite well.  A quick squeeze of grilled lime added a layer of smoky sourness to the mix.

    That looks awesome!  I’ll be stealing the coconut mix.  It’s crazy how a short grilling makes a lime explode with flavor.

    Watch out with that Zataran's concentrate, it removes paint from cars and it goes a long way.  That said, I buy it by the gallon.  Good stuff.

    Sure, but what do *you* use it for?  Cooking with, or stripping paint from cars?

    Sure, but what do *you* use it for?  Cooking with, or stripping paint from cars?
    It's a  good substitute for sweet vermouth in an Evan Williams manhattan.
