Coffee Rub for Beef

Found this and tried it out on a slow roasted tenderloin. Worked out very well, will try it on brisket next.
  • 1-1/2 cups packed dark brown sugar
  • 1 cup ground espresso coffee beans
  • 1 cup kosher salt
  • 1/4 cup freshly ground black pepper
  • 1/4 cup granulated garlic
  • 2 tablespoons ground cinnamon
  • 2 tablespoons ground cumin
  • 2 tablespoons cayenne pepper

    Looks good Ron. What temperature did you cook at and what temperature did you pull? Finally how long was the cook?

    225, pulled when the ends were 145F IT, the middle was about 125F IT. Cooked about 2.5 hours raised indirect smoking with pecan. Wrapped in foil after pulling off the bge, for at least 20 mins.
    Saved the drippings and put them into an ice tray to add to our Bloody Maries in the morning.
    Whole new word for delicious is needed, especially when using Robin's @northGAcock reccipe for a great morning drink.

    I was initially apprehensive on the cook, having a system that works very well. I tried it out on this cook, and was somewhat pleasently surprised. Lots of layers in this cook. Everyone seemed to be very pleased with the results. I will do this again.

    Ron, that does look very good.  Did you consider searing at any point or do you think that would have ruined the effect?

    Looks and sounds dang tasty, Ron. The coffee grounds were okay when eating? I’ve tried instant espresso powder before, but imagine that the flavor from ground coffee would be better.

    As usual another awesome cook!  I like this a lot.  
    Here is the thing, seriously, tenderloin tastes great, but it is not a major challenge to cook. Most folks call it boring. 
    I am not that good of a cook to call it boring, everything is a challenge to me.
    I want to make it have as many layers of flavor that I can, to keep people interested.
    I did like this a lot. I liked it because it saves me a bunch of money from buying other coffee rubs at about 8X the cost of making this.
    Did I mention I am cheap?

    This was my first time cooking it this way, and I will occasionally do a sear. My next I might try it to see how it turns out.
    This time, the layers of flavor were very noticeable and certainly added much to the overall result.
    Let me say this; I was happy with the result, and I just do not know if searing for char would add flavor, and I would be concerned for diminishing results.
    Once you try it, I think you might get a better understanding.

    With the ground coffee, I took it down pretty far. The juices helped diminish the "grounds" texture. I, too, used the powder before, and really did not enjoy as much as the grounds. Kind of like coarse ground salt or pepper versus finelt ground; you know it is there, but with coarse ground you get flavor and texture.
    Does that make sense?
    Bottom line, I liked it.

    @YukonRon thanks for posting that rub recipe. I've enjoyed Weber's Coffee rub as I can usually buy 3 massive jars on amazon for $15 total.  But sometimes it's hard to come across on amazon, so this is awesome.  Thanks man!

    No worries, thank you for investing your time in reading this post. Weber's coffee rub is great, I hope you will find this to be an adequate replacement. I like it better because you can control the pepper content to your liking (adding for me).

    I have got to try to low and slow on a tenderloin. If this one tasted as good as the one you made at BB19. Was so tender and melt in your mouth good. Thanks for the rub recipe, this is on my to do list for sure. Just beautiful!

    Thank you for viewing. We liked it, but I will tell you, I was extremely apprehensive on doing this rub, on this cut of beef. It worked out, and we paired it with a 2016 Napa Syrah, which was on the freaking money.
    I recommend a slow roast for this. Smoke with your favorite wood.
    You will not be disappointed.
    BB was a lot of fun again this year.....great seeing you there.
