Did a spatch'd chicken that had soaked for 24 hrs in Bobby Flay's southwestern buttermilk. Read raised direct at 400 (had an excursion to 430 early in the cook). Turned out pretty good.

I only used RW on this cook. I agree that the color is very like what I've attained with cherry, but in this case it was, I think, from the smoked paprika in the marinade, and maybe the turmeric.

@Mattman3969 It was subtle: I've never had a dry spatched bird, but this was in the top 5%.
