Maybe, i'm too much of a neophyte to appreciate the differences. On the few occasions, where I've used a larger cooler to cook in high volumes, I've used multiple immersion circulators ensuring not to exceed the thermal burden. At $400, I think I'd rather own 4 regulars than 1 Pro considering they are routinely on sale for about $100.
But, perhaps I'm missing some nuance due to my limited experience.

Agree, you and I are great examples of people who do not need the Pro version.
But many people would benefit from the power and extra water circulation.
If I were needing to heat larger containers on a regular basis it would be foolish to keep using multiple smaller consumer models. But I don't.

Bout damn time. When Electrolux bought Anova a couple years ago they announced that there would be some new models coming out last summer. The only one that was released was the Nano.
Specs look impressive and if you are the type that is doing the sous vide thing many times a week I can see that the price ain't bad if it lives up to its claimed water resistance and reliability.

Anova Pro= MOAR chocolate pots!!
i like that the Joule is 1100w, but it’s kinda plasticky with the plastic barrel and impeller. This would beat it handily in terms of wattage and water circulation, plus the impeller and barrel are steel. May have been more attractive at say $300, but maybe the price will come down over time.

It's not actually all that practical for me to do more pots at once.
Were I to purchase something like this, it would be because I'd be regularly doing like six racks of ribs at a time or something like that. The Anova unit that I have currently handles 99% of the things I need it to.

I'm happy with my minor league Anova. I've seen those for as low as $83 sometimes on amazon.
