Need advice for smoking/seasoning meat for tacos

Looking for advice, recipes, and anything else one might add to make tacos.  I do not care of it is beef, chicken, or pork, but I thought smoking the meat and having a flavorful rub would make a great taco.  I am making this for a party and do not want wet, saucy dripping meat.  I also do not want thin sliced meat either, was thinking more along the lines of shredded meat with lots of flavor, like my pork butts.  Anyways I would put it all in a pan and let people serve make their own tacos.
