So we had a big ole cheesecake sitting around and I had an idea... I was frying chicken tonight anyhow.
I cut the crust away from the cheesecake and then scooped out little balls with my cookie scoop (like a mini ice cream scoop) onto parchment. Popped them into the freezer while we made dinner.
heated my oil to 350 and dunked the frozen balls into pancake batter.
