OT - There was no calorie or carb counting today.

I have to watch calories and carbs because the doctor and lab results say so. We usually have one day a week where we don't worry about calories or carbs, just enjoy. I find constant deprivation does not work, so every now and then I just eat for the pleasure without being too strict. Sort of a reward for eating right the rest of the week.
So today was country ham biscuits drizzled with honey and butter (my neighbor has beehives and he gives us some very good, pure unprocessed honey), gravy and hash browns for breakfast.
The real kicker was supper. My wife is a genius (except for that one questionable time when she said "I do" to me).
Anyway the genius part was she wanted Mexican, but wanted something different, but did not want to cook.
She went to a local Mexican place for carry out and then here is what she did with what she picked up.
She got an order of rice, placed it in a bowl, topped the rice with white Mexican cheese dip, topped that with the fillings for TexasTrio fajitas (steak, chicken and shrimp and all the peppers, onions and tomatoes) then on top of all that she drizzled more of the cheese dip and some mango habanero hot sauce and served it with chips and salsa on the side.
This was a calorie full, carb laden, ooey gooey, cheesy, savory, flavorful explosion of goodness.
I'll eat better tomorrow.

I do something real similar. 6 days a week I eat good and drink nothing but water. Then comes cheat day where I reward myself. Depending on work and other things, it’s usually, but not always on Sunday.
I’m down from 264 to a ready 185 and have been holding that weight since November. Dropped from a 46” waist to a slim and trim 33”. I look really good in overalls now. Or so I have been told =)

Congratulations on your success. That is quite an accomplishment. I have not been strict enough, but am down to around 230 from a hign of around 275. Got a way to go, but with warmer weather coming soon there will be more time to get outside and more active.
My main issue is A1C and blood glucose numbers are still too high.

I am doing a low carb diet, not so much counting calories.  Just making sure I eat a ton of vegetables, along with meat and dairy mainly.  Down from 270 to 230.

One of my go to meals is a taco or fajita salad, which is basically what you did except use lettuce instead of rice.  I will go easy on the queso, just enough to add flavor but add sour cream, avacado, and salsa.

I do miss the chips, tortillas, beans, and rice though.

Yeah, low carb works much better for me than counting calories. There are lots of good, low carb things you can have and the variety helps keep things interesting. I get decent results when I am real strict with it, but once the carb count goes up to around 60 or more per day, the weight loss stops or at least slows down substantially.
