carraway and salt, salt and cheese. lost my recipe so just did it, slightly on the bread side. probably the long rise yeast was not the best choice

lkapigian said:If you could Dig Up That Recipe, would love to try pretzels !!pretzels are basically easy. dry active yeast packet, 1/4 cup warm water about 105 degrees, a tblsp or two brown or white sugar, set aside and let it foam. warm up 2 cups of water or milk, or water and milk to 105 f. add the foamed up yeast mixture to 2 cups flour, add a tsp salt, mix. add the water/milk and then add more flour til the dough looks right and starts to stop sticking, about 2 to 2.5 cups more flour. set in a covered bowl in a warm place to rise. punch it down, let it rise again, punch it down and roll it out into 4 to 6 pieces, form pretzels.so foam up some yeast, add flour, warm liquid, a little salt, rise, punch it, roll it. form desired shape.oven set for 425, oil baking sheet lightly (you really want to wax it with bees wax not oil)you can butter the pretzel tops and salt them and bakeyou can dip them in 4 cups boiling water with a 1/4 cup baking soda and bake(better than buttered but not as chewey or dark brown as you want)buy stump killer (food grade lye on line) 1.5 table spoons added to 4 cups COLD WATER, bring to a boil. lay pretzels in this for 3 seconds, flip with a pair of spatulas, 3 more seconds, seems to take 6 seconds per side trying not to splash anything during the cook. and bake. they start to look done in 13 minutes, judgement call. dont splash the lyeafter dipping, immediatly salt them as they come out of the water. just do one at a time. the poisonous lye disappears later when heated up. i also like to add caraway seeds with the salt.use stainless when using lye, i once used an enameled pot and it severely ate into the enamelloosen the pretzels from the pan about halfway into the cookyou can rise the dough overnight in an oiled bag in the fridge. pretzels, deli mustard, cold beer for breakfast. if your butcher has the german white sausages, it goes well with this breakfastfukahwee maineyou can lead a fish to water but you can not make him drink it
