Reverse Sear Pork Chops
I didnt follow @The Cen-Tex Smoker recipe but I borrowed the idea for reverse sear Pork Chops after picking up a great deal at the local HEB on a huge pack of them.

First marinated the meat in Huli Huli Sauce for about 4 hours
Next set up Egg with PS woo and two half deflectors to get max coverage for indirect at ~235. Got all but one chop to fit.
Flipped them once, but after they reached ~135 maybe 35-40 min, pulled them and switched over to the Gasser which I had set up at ~500 for a quick sear on each side
Never got a pic of all the food or a plate as the kids, my mom, my brother and I all devoured it. There were however three Chops left for a finished product pic.
