Help! Need Asian Pork Butt recipe

Wife wants asian lettuce cups style pulled pork, do I marinate with anything special and just make dipping sauce or do you have a preferred rub/marinade? My normal go-to pork butt ritual is to slather with mustard then dizzy pig and let sit overnight, wondering if there is a better idea for asian style?

If it were me I would make a marinade of soy sauce, ginger, garlic, honey and maybe a little sesame oil and baste it every hour or so.

You might go w. something like Chinese 5 spice, soy sauce and hoisin, all of which a available in many stores. Maybe add some sweet/sour, a combination of orange concentrate and tamarind paste if you can find it.

@ColtsFan @gdenby thanks, going with Kenji's recipe, keep it simple (mustard and a little tom douglas bbq rub overnight), then making a few dipping sauces: char sui, chimichurri, and bbq. He raises temp to 500 degrees to crisp up the skin (which I have never done), but I do not have any skin so I'll skip that part:

Yes, skip the 500 degree part. I tried following the recipe when Kenji 1st posted it, and I ended up w. not crisp, but hard and burnt skin. Not so easy.What I mentioned, 5 spice, hoisin, & soy, is essentially char sui.There is a little stand in town making Argentine empanadas, and serving w. chimichurri. They must use some really good olive oil, 'cause theirs is incredibly rich.
