Tonight I made... Doritos Locos Smashburger Tacos (pics)

I saw they had nacho cheese taco shells at the store, so I figured what the heck. Charred up an onion, got the griddle to 800, pulled out a pound of ground beef and smashed it on the hot surface (after hitting with some salt and taco seasoning). Flipped the beef over after the sear and chopped it right on the griddle with an old kitchen knife, then mixed in the onions. Loaded cast iron with taco shells, beef/onion, black beans, tomatos, jalapenos, and cheese. Pulled after a few minutes.
These were good, maybe not the best tacos I've made but definitely interesting and fun. I say try it, entire process (even getting the egg up to temp) took about 45 minutes, so may be a weeknight option.

I'd eat all of those. And thanks for the info about the limitations of grill grates as I got some for Christmas but haven't used them yet.

I looked for those shells at my local Publix as I had forgotten about them. I did not see them in the Mexican section.....Had a crap load of Ol Elpaso. that said, where do they normally reside? Chip section possibly?
