Roast Beast for two

It’s just the two of us this year so I’m doing a small beast, about 5#. A couple weeks of aging with an herbal coating should do the trick. It’s sitting on a nice bed of mirepoix with a little beef stock added. Here’s the “before” shot. It’s on the Egg now with a couple chunks of pecan for a nice slow roast.
