For years now I have egged a Smithville ham using Egret's recipe. I recall that some company in China bought the Smithville company, but supposedly would continue the curing, seasoning and smoking processes that Smithville perfected.

Reading the ads I see none of our local chains carry Smithville any more. Out of panic I Googled it and it appears Wally World still sells them! Just the same what if I can't find Smithville...Is there a comparable TASTING ham?

    It was a pretty straightforward question. Smithfield sells both country and city hams. I hadn’t seen anyone post about doing a country ham Egret style so that is why I asked. A yes or no would have done. I have no idea what you tried to say.  
  • Ron, one year I was dumb enough to wait for a Honeybaked, I got home to find out they messed up and gave me a smoked turkey breast, with company on the way I scrambled to the store and grabbed whatever they had, turns out it was a Smithfield...     I read a month or two ago, I think it was, that "the Smithfield Ham" is no longer in production.  That company still exists, and it still makes hams, including country hams, but what has been known for many generations as "the Smithfield Ham," which was a very specific type of country ham, will never be made again.  I only cooked one of them, many years ago, but it sure was good!

    I had not mentioned Cooks, but I have used them for several Easters now, but I haven't even found them locally. Got any recommendations?

    I only buy Cooks. Both Cooks illustrated and Cooks Country rated them # 1.  
    Salado TX & 30A  FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now).

    Well Sh!t if it's true that really sucks, it was a good basic ham! Anyone have a good replacement?, Ron and I are in the semi-great state of Illinois FYI.

    The recipe calls for a regular ol' cooked (city) ham.  Country hams never ever come cooked if they are legit.

    Ron, I think you can buy any ham.  So much sugar and flavor is added via maple syrup and maple-bourbon paste, the main issue will just be the quality of the meat.  So I would say don't buy the cheapest (on-sale) ham, buy any brand of regular old city ham that costs more than average and you should have a quality final product.


    Maple-Bourbon Ham
    Egret

    Ingredients:
    Maple-Bourbon Paste (recipe follows)
    10-12 # cooked, ready to eat Ham (bone-in Butt or Shank section)
    1/2-1 cup Maple Syrup
    Cherry and Apple Chunks
    Preparation:
    The day before smoking, place ham in a pan flat side down. Inject in multiple
    locations with maple syrup (use more than 1 cup if it will take it).
    Smear the Maple-Bourbon Paste all over the exposed surfaces (except flat side).
    Cover loosely with plastic wrap and put in refrigerator until ready to smoke (You
    can remove ham from refrigerator up to one hour before cooking).
    Stabilize egg at 250
    °F
    with plate setter (legs up) and regular grid on plate setter.
    Put 3 or 4 good size chunks of wood on coals, then place ham on grid. Cook until
    internal temperature reaches 140°. (this should take about 5 hours).
    Maple-Bourbon Paste:
    2 Tbls. pure Maple Syrup
    2 Tbls. freshly ground Black Pepper
    2 Tbls. Dijon or Honey-Dijon Mustard
    1 Tbls. Bourbon
    1 Tbls. Vegetable Oil
    1 Tbls. Paprika
    1 Tbls. Onion Powder
    2 tsp. coarse Salt, either Kosher or Sea Salt

  • Just saw several Smithfield hams at Ingles in Cumming Ga. Yesterday, not country hams, just the regular hardwood smoked whole hams.
    LBGE, and just enough knowledge and gadgets to be dangerous .

    Thanks for all the responses. With luck today I found Cook's at our local Schnucks store. According to their "meat man" they just don't advertise them as they are the higher priced brand hams.

    Smithfield can still be found at Meijers stores—at least here in Ohio.
