I’m sure this has been covered here before, but I’m too lazy to search the forum lol.
Im smoking 12 racks of spares for our shop Xmas party on Friday. I want to do the prep work the night before, as I have to put them on by 6 AM, to be ready by noon.
My my question is can I apply the rub the night before? I had read somewhere years ago not to do so, and I never have. Just wanted some input from you guys. I always apply 1/2 hour before I put them on, outcome has always been pretty good.

Salting to early can make them " hammy" if the rub is not salt heavy you should be fine ..I do them ahead with no issuesVisalia, Ca @lkapigian
