CGS Tandoori skewer rack

For years, I have been trying different techniques for hanging skewers to do tandoori style cooking.  Nothing was really working the way I wanted it to.  So, I was in the DFW area in Texas for Thanksgiving and thought I would finally drop by the Ceramic Grill Store.  I have been a customer as far back as 2005/2006 with an original spider and woo ring.  Well, I had been thinking lately that maybe I could get Tom to come up with a way to make an accessory for my PS Woo to get a ring up into the dome to hang skewers from.  I told Tom about what I wanted.  I figured he would want to think about it and get back to me.  Nope.  He called his welder out and asked him a couple of questions and 20 minutes later I had what I had been wanting all this time.  It is based off the PS Woo extender with a ring raised up about 8” above the felt line.  Using a 14” to 16” skewer, it worlds perfectly with charcoal right to the bottom of the fire ring.  I actually tried it out with a vortex ring to keep the coals toward the outside, but didn’t quite get as hot as I wanted.  Still have some experimenting to do. All that to say is Tom and everyone at the Ceramic Grill Store are awesome and if you have not checked them out yet, you are doing yourself a disservice.  Here are a few pictures of my first cook.

    Yes.  I had measured the clearance needed and the lid closes fine.

    Just asking, but is there really a great difference in hanging a skewer instead of laying it across the cooking grate?

    Yes,  there is. Drippings from the pieces higher up baste the pieces below. 

    At least that's how I think it works...

    So , the pieces towards the top just suck because they get no drippings?

    They would get the same amount as if they were laid horizontally so maybe just one or two sucks rather than all of them. :)

    That’s really cool! People have been trying to crack that nut on here for a long time. Very cool of Tom to rig that up for you on the spot. 

    I’ve always thought the main reason to hang Indian kebabs is because they are usually marinated and all the marinade sticks to the grid and you lose all that deliciousness when it comes off. I use the adjustable rig with crossbars but no grids and the same skewers OP uses here. The skewers lay across large AR crossbars perfectly and there is no grid for the marinade to stick to. For those of you with an AR and don’t want a special kebab rig, this works really well as a substitute.

    @The Cen-Tex Smoker  What's the brand name of the skewers?  Also, can you close the BGE lid when you use that setup?
    It's "Smokin Gal", not "Smoking Al".

    @The Cen-Tex Smoker  another use for the rig.....it's abilities just keep coming.  After the holiday, I'll need to look into skewers......lol

    @tjv, how can I order one? I hang chickens in my WSM all of the time and it’s amazing. I’ve wanted to try something in the egg. 

    I sold my woo bundled with my last large, but my new large has an AR, or I have two fire rings giving it the same height as a woo.

    they are the Steven Raichlan flat skewers. You can shut the dome and you can spin the AR around if you have hot spots to make sure everything cooks evenly.

    you should of skewers! would be a great ad-on for people buying a rig. Make sure they are flat or triangular (would be even better). Rounds ones always roll to where the heaviest side is on the bottom so they don't cook evenly

    and a special crossbar setup specifically for kebabs would be awesome. I'll be first in line to buy one. I can help you get measurements if you need them.

    I like the design. Nice idea. I'd say a mass produced design would need to stand alone rather than sit on the wok thingy. I have an AR.

    I use a double skewer to keep the food from rolling. Smaller holes. Got it on Amazon. Cuisinart CSKS-048 Sliding Skewer Pack.
