Time and Temp

    I started these turkeys with the grease at 375 degrees. I held it at 325 degrees for the duration of the cook. 

    7 pound breast registered 155 degrees at exactly 38 minutes at 325 degrees. 

    After a 10 minute rest, it registered a near perfect 161 degrees. I over shot by 1 degree. Not to bad for something deep fried. 

    Location- Just "this side" of Biloxi, Ms.

    Status- Standing by.

    IF the seven P's were invoked then the odds of the freak-out would be greatly reduced.  However, in the midst of the storm I agree it is too late.  That said, pork butt going for the local fire-house; temp around 275*F on the dome-time TBD.  Finish-line determined when the bone pulls clean.
