love making this dish this time of year. Have been cold smoking and dehydrating peppers as they ripen all summer. Finally had enough preserved that i could tackle this recipie https://www.epicurious.com/recipes/food/views/our-favorite-texas-beef-chili-51249010

cold smoked the beef ahead of time as well 

highly recommend tbis cook if you haven’t tackled it
