First reverse sear

First time attempting a reverse sear. Cooking some jalapeño/cheddar sausages along the way too.

Pull it a few degrees lower than you think you need to.
Sear it with the lid open.
It is easy to overcook when reverse searing.XXL BGE, Karebecue, Klose BYC, Chargiller Akorn Kamado, Weber Smokey Mountain, Grand Turbo gasser, Weber Smoky Joe, and the wheelbarrow that my grandfather used to cook steaks from his cattle

A spot of advice. A reverse sear doesn’t need to rest, in fact it will continue to cook. You can slice right off the grill it won’t bleed.
