    I was asked to post my recipe from a recent "Throwdown" so here it is.

    Smoked Buffalo Chicken Dip:

    10-12 smoked chicken thighs (brined w/ a gallon of water, 1 cup brown sugar, 1 cup salt. Rinsed, dried, smoked with apple/cherry to 185. Remove skin and shred)

    FOR DIP
    1 cup Franks Red Hot (sub Valentinas and El Yucateco Smoked Habanero or blend for flavor)
    1 tsp salt
    1/2 onion
    1 clove garlic
    1 jalapeno
    1/2 tsp pepper
    1/2 tsp chili powder
    1 tsp cayenne pepper
    1 tbsp paprika
    1/4 tsp celery seed
    1 tsp cumin
    4 oz cream cheese (more or less to preferred creaminess)
    1/3 cup chicken broth (more or less to texture)

    Mix well over low heat until ingredients are mixed and at a preferred texture.

    FOR TOPPING (ALL OPTIONAL)
    Shredded cheese of choice
    Jalapenos (fresh or pickled)
    Olives
    Bell Peppers
    Rough Chopped Bacon or Chopped Pork Belly
    Chorizo
    Etc...use your imagination.

    Top with green onions and a dollop of sour cream. 

    Add a layer of cheese. Put on a layer of toppings of your choosing. Apply an additional layer of cheese. Broil or cook indirect at 500+ until lightly browned.

    Enjoy! Let me know what worked, changed, applied, etc! (I have a theory to add a packet of Ranch seasoning to give it the full "Buffalo Chicken bite" experience.

    3/4 cup almond flour
    1 1/2 cup mozzerella
    2 tbsp cream cheese
    1 tsp white wine vinegar
    1/2 tsp salt

    melt mozzarella and cream cheese. (60-90 seconds in microwave). Stir in the rest of the ingredients. Put down some parchment paper on both sides and smash with hands to get it where you want it. Then bake 12-14 minutes on parchment paper 400

    No pics, but last night made chicken alfredo

    baked chicken

    1/4 cup butter
    1 cup cream 
    1 clove garlic
    1.5 cup Parmesan 
    1/4 fresh parsley 

    over spaghetti squash
    cut in half microwave flesh down for 10 min or so. (Lazy way)

    Made a similar version last Friday night and added rosemary to the dough. Pretty good.

    I started putting italian seasoning in it and making pigs in a blanket. It’s a blank canvas.

    SV Chicken with Roasted Radishes 

    Chicken breast 
    EVOO
    SnP
    Fresh Rosemary 
    Fresh Sage. 
    1tblso if butter per breast 
    SV 146° for 1 1/2- 2hrs 
    then sear in cast iron with Ghee


    Radishes 
    1 bag of radishes cleaned and split 
    SnP
    Fresh Thyme 
    Fresh rosemary 
    Soray dish with EVOO.   Toss radishes in EVOO and the above seasonings.  
    Bake in oven or egg for 45 -55 mins until brown and tender.  Sprinkle with parm and cook for another 4-6 mins.   

    The radishes do a really good job of imitating lil red taters.

    I really like the radishes and follow a very similar recipe.  I will say that I use at least three bags, because they reduce down so much w the cook. 400 degrees 45-50 mins.

    I was the same way @GATraveller     These changed my thoughts on that.   I’m jonesing hard for a baked potato.  This didn’t totally satisfy but seriously helped.

    This is what we made. Fathead dough.

    Ingredients

    • 1 3/4 cups pre shredded/grated cheese mozzarella is the best or Edam/mild cheese
    • 3/4 cups almond meal/flour
    • 2 tbsp cream cheese
    • egg
    • pinch salt to taste
    • 1/2 tsp dried rosemary/ garlic or other flavourings optional
    • your choice of toppings such as pepperoni peppers, cherry tomatoes, olives, ground/mince beef, mushrooms, herbs etc

    i do some buttermilk brined chicken thighs with a bacon cream sauce always comes out pretty good and easy. i always double it up, makes good leftovers.

    Buttermilk brine:
    Whole Fat butter milk
    1/4 cup of salt per half gallon
    3 tbl pepper
    dash of cayenne more for more heat

    brine overnight and cook at 400 raised direct with rub of choice

    cream sauce:
    4 tbsp of shredded parmesan
    5 peices of bacon fried and crumbled (save 2-3 tbsp of grease for sauce)
    1/2 cup of heavy cream
    1 tbsp cream cheese (softened)
    1 cup of cooked and chopped spinach
    Garlic, salt and pepper to taste

    Warm the grease, dont let it start to sizzle or bubble.  mix in the cream and stir until it starts to foam.  
    Add in the cream cheese, shredded cheese and spices stir until well combined.
    Add in the bacon and spinach saving some bacon to top the mixture with.

    Cover the chicken in the sauce, top with some bacon crumbles and go for it.  we have done it with some cauliflower mashed potatoes or green beans but youll have to cook more bacon for that stuff.

    no problem i have been experimenting quite abit, as stuff works out i will share.  i have really done some good pork rind fried items, shrimp and chicken mainly.  i am going to try pickles and jalapenos this weekend hopefully.

    we tried keto crack chicken and wow it is good, its not an egg recipe but well worth it.  

    1lb of chicken breasts
    8oz of cream cheese
    1 packet of dry ranch mix
    1/2lb of bacon cooked and crumbled

    place chicken , then cream cheese, then ranch mix and bacon in crockpot for 6-8hrs on low and shred the chicken, we served it with zucchini noodles it was fantastic.

    GROUND CHICKEN PIZZA CRUST:


    1lb. ground chicken
    1 xl egg
    ½ cup shredded (not grated) Parmasian cheese (any hard cheese will do)
    ½ cup shredded (not grated) Asaigo cheese (again any hard cheese will do)
    you can use 1 cup of the same cheese if you like play with it
    1 tsp garlic powder
    ½ tsp sea salt
    1 tbs italian seasoning
    mix with lightly oiled hands

    place on parchment paper and press into pizza shape cook without topping 20 minutes 450 indirect 

    add whatever toppings make you smile and cook again 450 till topping are your desired doneness

    CAULIFLOWER PIZZA CRUST (I did this in oven)


    The crust is super strong and can be eaten like real pizza when done no fork and knife (unless you go crazy with the toppings like I did on one fo them)
    Ingredients:
    2 cups riced cauliflower (I cut almost all of the stems off and put the florets in a food processor till rice consistency see below)
    1 xl egg
    ½ cup shredded (not grated) Parmasian cheese (any hard cheese will do)
    ½ cup shredded (not grated) Asaigo cheese (again any hard cheese will do)
    you can use 1 cup of the same cheese if you like play with it
    1 tsp garlic powder
    ½ tsp sea salt
    1 tbs italian seasoning

    1. Rice cauliflower in food processor try and use only the florets as little stem as possible place riced cauliflower in a pan and over low heat cook the riced cauliflower stirring occasionally until all the moisture is gone (it will stop steaming) but take your time this is very important so low heat and stir about 20-30 minutes. Your not looking to burn or brown the cauliflower just get the moisture out
    2. let cauliflower cool to the touch so you can hand mix the rest of ingredients
    3. mix above ingredient with cooled cauliflower 
    4. place the mix on parchment paper and flatten and shape to desired pizza size and thickness
    5. bake naked crust at 400 10 min-15 minutes till it looks like above picture not need to brown and the burnt edge isn't important either
    6. top anyway you like and cook again at 400 till your toppings are done

    This can be frozen after first cook and used at a later date so when you make them make a lot fo them and just out wax paper in-between and freeze
