Flounder Recipes /suggestions

Going spearfishing next month to replenish my freezer; we're going to be targeting flounder. Wanting to surprise my dad (his favorite fish)
Looking for some good suggestions for cooking on the egg to practice before I cook for him. Needing some recommendations on good side dishes too

My best flounder recipe is cooked in a foil packet in the oven. Never tried it on the egg.

Not very helpful on the egg but I love flounder lightly breaded and fried! Staying tuned to see what you decide.LBGE

We have a condo in PCB and always get fresh flounder, gigged the night before, when we're there. Don't have an egg down there but use the Weber kettle.
I do straight lump, direct with temp probably 350-400. Brush both sides with Duke's mayo and sprinkle with s&p. Top side down until it crisps and then flip for just a few minutes. You don't want to overcook. If they're big fish you might need a basket but the ones we get are usually about 1-2 lbs. and flip eaisly.Lenoir City, TN - Bama fan in Tenn Vol's backyard.

I follow alot of catch and cook folks on youtube and Jackie Shea fishing did one on a flounder. They pocketed a large flounder then stuffed it with a cajun mix of rice/crawfish... It was pretty cool how they de-boned the flounder in the video... Took alot longer then just slicing it open but was pretty sweet. Stuffed flounder has always been my favorite way to have flounder but I prefer many other fish over flatties.Hunting-Fishing-Cookin' on my EGG! Nothing else compares!
