Cheesecake on the XL

It's been a few years since I tried baking cheesecake and figured it was time to try it again.

I mixed up the graham cracker crumbles, melted butter, and sugar to form up the crusts and pre-baked two 7" spring forms in a clean burning XL Egg running at 350 using Rockwood:



Then got to work on the cream cheese filling,  making a mess in the kitchen, and annoying my wife with questions like “what does fluffy cream cheese look like?“ (following a recipe that asked for "fluffy"):


Filled the spring form pans and put them into the Egg to bake:


After baking for nearly an hour I topped them with a sour cream mix:


Let them cool in the refrigerator overnight and freed them from the pans this morning:


Topped one with blueberries:


And cut a slice:


This is only the 2nd time I've baked cheesecake and I learned few things:

1. Don't spread the crust so high up the sides of the forms

2. Leave baking cheesecake to my wife! This was too much work and it I prefer to eat it more than bake it.

3. I'm not real good at following recipes the first time.  My wife asked me, "can I put away the vanilla extract" and my response was "oh crap, I forgot to add it!" as I ran out to the Egg with the extract.

In case anyone is wondering, the cheesecake didn't smell smoky or taste like the last BBQ meal I cooked on the Egg (sausages).

    Holy crap. First, cheesecake on the egg turned out great. Second, cheesecake in the instapot?  I need to get that thing out of the closet!

  • Looks great, Dessert on the egg is a beautiful thing. I’ve done some brownies on the egg after a steak cook and need to up my game

    I've never baked one, but after watching a couple of videos of Instant Pot cheesecake, I ordered a pan just yesterday. I almost hope it turns out poorly or that it's a real PITA because they are incredibly rich and decadent and I'm afraid of the consequences!

    I've never baked one, but after watching a couple of videos of Instant Pot cheesecake, I ordered a pan just yesterday. I almost hope it turns out poorly or that it's a real PITA because they are incredibly rich and decadent and I'm afraid of the consequences!

    A lot of the recipes that I've read call for tenting. I do not and just soak up what little lit of water accumulates on the surface with a paper towel once I remove it.
