Beef Short Ribs and Twice Baked Potatoes

These beauties just went on at around 250F with some oak wood chunks. Seasoned with salt, pepper, and a little dizzy dust. Will post finished product later. Good rainy afternoon cook.

Finished. Whipped up some broccoli salad to go with. Turned out really good! Taters were amazing, smokey but too much. Ribs could’ve gone longer to get more fall apart tender but it was dinner time and they were still done. One of my best cooks lately.

OK, now I'm officially confused   The package of short ribs I brought, the bones were 7"-9" long.  Does your cut have a specific name?

@marysvilleksegghead those are the same ribs, but they are often sold cut in 1/2 across the bone. The butcher cuts them across the bones and cuts between the ribs to make individual ribs. Looks like you have full size ribs that were just cut into individual.

Thanks all and thanks @SmokeyPitt for coming along to answer @marysvilleksegghead question.  My local Market Street only has this length of short ribs so it's all I've seen.  Either way they come out like brisket on a stick.
