Backyard contest prep

Norah and I are cooking at a backyard event tomorrow. The required meat is a whole pork loin, so we are going to make some tacos el pastor.  Yikes I’m from ohio what the hell do I know about this.   Well I reached out to a friend who lives in Texas to see what I needed to know, because a kid from ohio who’s lived in Texas has to know right.  Well tonight Norah and I have prepare the marinade which consisted of 2 Cup white vinegar
10 Dried guajillo chii peppers
10 Dried pasilla chili pepper
4 Dried ancho chili pepper in adobo 
2 Medium onions, finely chopped
1 Head of garlic peeled
2 Tablespoon cumin powder
10 Cloves 
2 Cup pineapple juice
Salt to taste
4 Tablespoons vegetable oil
10 Limes, cut into wedges, optional
2 Bunch of cilantro, 
2 pineapples 

so far what we have tasted seems to be good, just do not know if we’re on the right track.  Time will tell.  


Also making a “salsa” with 
4 cups diced fresh pineapple
2 cup fresh cilantro, chopped
1 small red onion, finely chopped 
4 serrano pepper chopped
Zest and juice of 2 lime
1/2 teaspoon fine sea salt
