Something to feed any veggies you have visiting, or in my case it's just a nice side dish and especially good on crunchy toast.

Grill aubergine and peppers until blackened. We added tomatoes this time as well.

Peel and de-seed the peppers and slice up.

Cut the aubergine in half, scoop out the middle and slice.

Peel and slice tomatoes.

Put in a bowl, glug in some EVOO, season (adding chopped parsley is also nice) and serve.
