1st cook of the 3 day Labor Day weekend. Tacos Al Pastor with tomatillo chipotle salsa, homemade corn tortillas, refried beans, and spiced crema corn.
Marinated sliced pork shoulder on the Ceramic Grill Store vertical spit and PSWoo, indirect @350 until 150 internal.
Ready to slice.
Homemade corn tortillas on the Mini Max while the pork was cooking on the Large.
Going to try my hand at a 12lb brisket tomorrow.

I'm still working on my Al Pastor, not happy with it yet. Think it needs more pinapple and better peppers. Maybe try a vertical cook. Yours looks great!
