Another brisket on the stick burner

Had a good result a few weeks ago using my offset out at the lake. Got a prime packer from Costco for this weekend. Since I forgot to post finished pictures last time I decided to be more vigilant with the photos. Used 50/50 kosher salt/black pepper and a little Meat Church Holy Cow, same as last time. Put it on at 7:30AM after trimming it Franklin style.

    Great location.  Gonna be a protracted day of adult supervisory beverages to feed the fire.  You've got plenty of wood and a good looking hunk of protein.
    Enjoy the cook and follow-on eats.

    You're off to a great start.  Love feeding the stick burner a few times a year when time allows.

    I almost fell fell off my chair and then I realized there are two CarolinaQ ‘s. The other one would never buy an expensive roast of any kind. LOL!

    Are you sure your not me??? That pretty much exactly how I do brisket. Salt, Pepper and a little Holy Cow, trimmed Franklin Style.... On an OK Joe smoker no less. If you use a mix of Pecan and Post Oak, and drink Lone Star during the cook, then I'm gonna have to call the cops for identity theft....

    Mine is a really old one, when they were made a thicker metal. Horizon is making the thicker ones now, like the old OK Joe's.. Cannot vouch for the newer ones... Having said that, I'm sure it would be fine for a backyard.  http://www.horizonbbqsmokers.com/our-story/
