Classic crispy mac 'n' cheese

This one was concocted by SWMBO, and it was great. Inspired by some of the great mac 'n' cheese that we had in the US back in June. Made with smoked Red Leicester, mature cheddar and buffalo mozzarella. Recipe in the link below:

There are a few online places that sell if, easy to find through the magic trickery of Google.I was very lucky that we had a dip in temperature one weekend, which meant I could smoke the cheeses without them melting.-----------------------------------------------------------------------
