1st time jerking my own meat

yeah. Went there.  have been thinking about it for way too long. 4 lbs Bottom round turned into 3 lbs sliced all sorts of ways. Curing now. Box cure mix enhanced with lemon pepper and chili flakes. Cold smoke Sunday. FFFFFF yeah. That’s the bourbon talking 

What possibly could go wrong??
