Reverse seared rump steak, Red Eye and Cow Lick, truffle mushrooms, video clip

Cooked last night in the Minimax, a 2.6lb single rump steak, about an inch thick. Reverse seared to 125F IT, FTC-ed, seared and served with truffle oil and red eye express infused mushrooms and fresh asparagus tips. First time we'd done a rump this big, in hindsight would have done it to 120F IT.

Cheers folks.@Theophan - SWMBO's pro camera is being repaired, so the shots and video above were taken with an iPhone 8 Plus in portrait mode and blending the images in paint.net afterwards. Thanks, it really was. Different to reverse-seared rib-eye, which is what we normally have. Think I'll be doing more rump like this in the future.CPARKTX said:Dang that looks good!
