Butt issues

Happy Fouth! I have a 10# butt I put on this morning about 5:30. I checked the pit temp every couple of hours this morning and it was a steady 250. I had the Guru set at 237 but I could certainly live with the difference. I just checked again and the pit is up to 325. I have everything closed down other than I usually slip the pit probe in through the daisy wheel so there is a small gap there. Other than that..
nada. Anything I can do to lower the pit temperature? I added ice to the drip pan but raising the hood to do so offset any benefit with that. Think it’s getting air from somewhere so maybe time for a new gasket but anything I can do now?

You can just take it off the smoker for a bit and throw it in the over in a pan for awhile until your Egg cools down enough, and it will. Butts are so forgiving that a brief time away from the smoke probably won't make any real difference.

I wouldn’t sweat it too much. I normally cook my butts at 275. My kit went all crazy on me the other week and i had temps hit 300+ on multiple occasions. I went to bed and didn’t stress it.
Finished at 0600 (way earlier than intended), I FTC and pulled at noon. IT was 151 when I pulled it to serve and it was gone in 30 mins.
Point being a butt is a resilient lil thing and will be just fine.Located Middle GA

Correct. Foil, wrap in towels, place in cooler. It'll hold for hours.Dawgtired said:
