OT: Bourdain’s scrambled eggs

    Look great. And thank you for not overcooking the eggs. Dry scrambled eggs are a trigger for me, apparently.

    @tarheelmatt it took me over a decade but I finally convinced my wife that an egg, in fact, did not require brown spots before removing it from the pan. 

    Its a battle.

    I seem to remember I posted a similar recipe, the differences being butter replaced the bacon and creme fraiche replaced the sour creme (creme fraiche is basically high-fat sour cream).

    Anyway, totally delicious.  Salt after the eggs are cooked.

    These are going on the list of things to try.  Simple enough that hopefully my kids can get comfortable making this. Although, I know that all too often “simple” does not mean easy.

    I haven’t made scrambled eggs in forever, and while I’m sure these are pretty far from the quality AB used to attain, they really were about as easy as it gets to make.  And they’re good too.  The sour cream trick works, and with bacon mixed in, well... what more can you ask for from a quick breakfast?

    I Salt before and then after to taste. Why am I doing it wrong? ;)

    I’m pretty sure I haven’t eaten scrambled eggs prepared by anyone besides myself in 30+ years except for a Jewish deli in Pompano Beach Fl. Scrambled w/ salami.
