We decided to make some spicy Italian sausages for Memorial Day Weekend. I put the sausages right on the grid for about 5 mins per side to get some color. Then I brought out the lodge cast iron skillet and added some basil olive oil and butter to do red/green peppers and onions with basil and oregano. I then added the sausages back to the cast iron with some salt and pepper and red wine and covered for another 20 mins.
Served with orzo, side salad, and a nice Monterey Pinot Noir.
I'm only partially ashamed to admit I ate three sausages on my own.

I did them as sandwiches a few weeks back with provolone. It was really good. To be honest though, the bread and cheese treatment were not as good as just served straight up over orzo. That could be the red wine talking but that's my current assessment.
