Memorial Day test run

We are out at our lake place and having people out tomorrow and Monday to celebrate the holiday. I’ve got an Oklahoma Joe offset smoker out here because the large egg is too heavy to travel with and too expensive to buy two of!
Doing a butt test run to make sure I’ve got it all dialed in. Will be doing a brisket first thing tomorrow morning (5am) hoping to get it done by 6-7pm for dinner. I’ve found brisket on the offset is a lot easier for me than the egg, mainly because I need an XL to keep the edges from getting torched.
Anyway, rubbed it with Meat Church Honey Hog and got this 7lbs specimen on at 7am. Using just small hickory and oak splits. I’m about six hours in. Thanks for looking!

Enjoy playing with the sticks. BTW- you can drape the cow over a foiled brick or inverted rib rack to get a cleaner fit til shrinkage takes over with the BGE.
But messing about with sticks is fun as long as you have a support cast if an over-night adventure. FWIW-Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period. -
Agreed on needing pit helpers for those long cooks using a stick burner. It’s 7:30 and I’m already exhausted from the early rise to get the cow on!
