Jimmy P’s Berkshire chops with Pineapple Salsa

Got  to love Florida. Fresh vegetables and fruit, sunshine, great wine. Made some nice fresh pineapple salsa to go with the chops. Some rice and asparagus rounded out the meal. I’m stuffed now!

You mind posting the pineapple salsa recipe I’d like to try it this week?

I just mixed pineapple, red pepper, red onion, jalapeño, lime juice, olive oil, salt and pepper and cilantro until I liked the taste of it

Great looking meal right there.  Pork chops look fantastic.  I make an almost identical salsa that I pair with pork, but use Granny Smith apples instead of pineapple.

Yup  Close to the corner of 41 and Collier.  Maybe 10 minutes from the Marco Island Bridge.  Did you go to Goodland on Sunday and watch the show at Stan's?
