I Need Ideas

I'm going to spin a pork loin on the JoeTisserie on Sunday. I'm looking to do something "outside of the box", so help me out.

Here's what I'm thinking. Butterfly the loin, stuff it with something, roll/truss/spin.

Here's where I need ideas. What do I stuff it with? Do I glaze it with something too? Bacon Weave?
