Costco pork loin

at 1.79 it's hard to pass up. We cut it up today into 2 roast and the rest in chops. Butterflied one tonight and filled with jimmy dean sausage, broken up garlic croutons, onion, garlic cloves, asparagus, evoo, and peppers, hot and regular. 300 indirect for 2 hours, around 140.

Looks done perfectly! We got several at a great deal at our Costco. Tried some thick chops sous vide. 3 hours at 138, then seared on the Egg real hot and quick-like. Nice. But your stuffed ones look awful good right now! Nice cook @Woodchunk !
