Early 2000’s Posole... ish

another freezer dive cook. I had every intention of following a recipe, but things sort of devolved as things got rolling. Started out with the posole recipe from John Currence’s “Big Bad Breakfast”. I farkin love that book.
Proteins.
An assortment of pork bits from 2013 onwards. I live in constant fear of not having freezer space for our happy hippy hogs, so freezer diving is a sport here. Yes, I could buy another freezer. But that would be too easy. Pork trims from spares over the years, something from Blue Apron when we tried it some time ago, something from one of our hogs, and bony beef ribs that I decided to exclude after the pic.
Flour, pepper, cumin, salt to dredge the meat bits in.
Browning the pork bits bits up in some of our happy hog lard.
Stuff went into the pot. Toasted cumin, onions, garlic, tomatoes, oregano, etc. Things started going down hill at this point. Added light soy sauce, mirin, rice vinegar, anchovy paste after the day beers kicked in.
Its all on the egg now to catch some smoke. Hominy will go in after a bit.

needed some salt and liquid, so added some fish sauce and a lime sparkling water. I figured it couldn't hurt.
Its off the egg now. A bubbly gif before I pulled it. Had to go to work, but it was luckily done just in time.
