Brisket Flat and CI Cornbread

day off work today resulted in a brisket flat and CI cornbread (inspired by @caliking).  Flat was smoked for around 7 hours at 250, pulled at IT 200 and FTC for 2 hours prior to serving.

Cornbread was made following @caliking recipe posted the other day minus the cheese, onions and peppers. I wanted a plain cornbread as a baseline prior to trying variations.  Thanks for the recipe.

Didn’t get a plated pic, guests were drooling over the carved brisket.  Side salad wasn’t worth a picture.  Beer tonight was Summit Brewery Belgian Style Pale Ale, Bird Dog 10 year old bourbon as a night cap.

Looks like a great Friday night feast. What size is the lodge? I'm considering the 17" for my arsenal.

10” CI used there.  I bought the Dutch oven, pan combo.  Use it all the time.

Ya!  That brisket looks like it was drool worthy!  Nice work?

Way to nail that brisket-and especially a flat.  Congrats.  Cornbread a winner, as well.

Looks outstanding all the way around. Love the breakfast....after all, it’s the most important meal of the day.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven.
