Brisket Flat and CI Cornbread

day off work today resulted in a brisket flat and CI cornbread (inspired by @caliking). Flat was smoked for around 7 hours at 250, pulled at IT 200 and FTC for 2 hours prior to serving.
Cornbread was made following @caliking recipe posted the other day minus the cheese, onions and peppers. I wanted a plain cornbread as a baseline prior to trying variations. Thanks for the recipe.
Didn’t get a plated pic, guests were drooling over the carved brisket. Side salad wasn’t worth a picture. Beer tonight was Summit Brewery Belgian Style Pale Ale, Bird Dog 10 year old bourbon as a night cap.

Way to nail that brisket-and especially a flat. Congrats. Cornbread a winner, as well.Louisville; Rolling smoke in the neighbourhood. # 38 for the win. Life is too short for light/lite beer! Seems I'm livin in a transitional period.

Large BGE & Mini Max for the wok. A few old camp Dutch ovens and a wood fired oven. LSG 24” cabinet offset smoker. There are a few paella pans and a Patagonia cross in the barn. A curing chamber for bacterial transformation of meats...
