I went full shun premier at the house. The restaurant where I work’s chefs ALL try different knives and end up coming back to the classic or premier shun. And they’re guaranteed for life, with free ($2 for shipping) sharpening and repairs. Plus, they really do look great...
amazon has the shun premier GOKUJO boning knife at its lowest price in history right now $115 shipped. Mine will arrive today. Been watching this one for years to come down.

We display our knives prominently in our kitchen and use the hell out of them. A $500 budget is huge. Every one I got was bought individually from old chefs, Craigslist, CKTG, or amazon.

Either are great. We went with premier, mostly, because of the hammering.

I finally got the knife back. Custom saya in purpleheart and a custom handle in koa/purpleheart. The knife is a Masamoto KS Gyuto 240 mm.

It looks like you already made your choice but the Miyabi 5000 MCD 67 Black are fantastic. They are made out of special which I understand is exclusive to Zwilling.
I call them Black Beauties:

@mgoblue0484 I paid about 350$ Canadian directly from Zwilling’s website during their new year eve sales. The cheapest I have seen them since the sale is 500$ from another retailer. The birchwood? The steel does not look the same at all. This one almost looks like plain carbon steel. It has a matte finish and is not shiny. I was going to get the fujihiki from Knifewear but when I saw these, I jumped on them. By far my favourite we have is the Takeda my wife splurged on at Knifewear a few years back. Light as anything and razor sharp super blue.
Going into that store is dangerous.
