I have not smoked the SRF RR Brisket offered here but every packer brisket I have ever had from any source (including SRF) can use a trimming. The amount is definitely a variable. FWIW-Louisville; Rolling smoke in the neighbourhood. Life is too short for light/lite beer! Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

FYI - the ribeye caps are amazing. I've never had anything like them. I ordered two of the gold grade.

Just my $0.02, but I reverse seared it and it was the best steak I'd ever had. I say that alot, though, so take it with a grain of salt. Here's a rib eye cap thread I started when I was thinking I might roll one before cooking. (answer: DON'T!) Removed the cap and cut the center section into steaks. The whole thing was less than $100.00. Not SRF Gold but damn good. The free, center cut steaks were also excellent. Also had some cap that was purchased from Costco at my brothers. Also excellent.
I have placed a few orders from SRF with past sales. It's a treat for sure.
But I get more enjoyment finding the hidden gems labeled as choice in my local stores.Thank you,DarianGalveston Texas -
